mind: shopping historic Gruene; kicking up your heels at Gruene Hall, Texas's
oldest dancehall; water parks and floating the rivers. Fine dining wasn't
usually in the forefront of most visitors' minds, that is until early 2003 when
Bill Been '76 and his wife, JoAnna Maniatis Been '76 opened Myron's Prime Steakhouse

Veteran of Old San Francisco as well as the Cadillac Bar and most recently Swig,
Been has witnessed the rise and fall of steak stocks in lockstep with the latest
dietary craze. (Note: If you’ve been on another planet for the past couple of years,
Atkins advocates consider steak the equivalent of the Holy Grail, and the price
of beef has risen accordingly.)...

Dear Pat: I have been a follower of your column for years. It's great and I have a
scrapbook full of your great recipe finds. I have several times thought of sending in a
request and this is one I wanted so much I'm finally actually writing you. My husband and
I have been to the wonderful Myron's Steak House in New Braunfels a couple of times and
enjoyed the entire meal, but the highlight was their terrific blue cheese dressing. It's
great and so fresh-tasting on the nice slice of iceberg lettuce they serve it on. I have
made four or five different blue cheese dressings since, hoping to somehow duplicate it.
While there were some good ones, they still can't compare. Can you help?...

Bill Been (pronounced as though you're English) has been (American version) around.
From Old San Francisco to Swig, his hospitality history includes several steakhouses,
and it all seems now to have building toward the opening of Myrons, his own hock-the-house
place in New Braunfels. It's a shame he had to leave town to realize his dream, but the
move might prove to be more astute than we had imagined...
